Lemons & Lemonade

Summer has always linked in my head with lemons and lemonade. Homemade lemonade; not the fizzy type, the refreshing, tastes healthy- but has too much sugar in it to actually be healthy- type. Lemon sorbet. Lemon drizzle cake… and (picked up from travels in Africa) my favourite gin based cocktail. Basically, I am using the excuse of having a new lemon squeezer on the website to share a few of my favourite food and drink recipes with you all. I hope you enjoy.


Homemade Lemonade

Boil 2 pints of water.

Add 2 heaped tablespoons of granulated sugar.

Squeeze (see it does link to the website) 2 lemons and grate the rind.

Add all three into a heat proof jug and stir until the sugar disappears.

Leave to cool. To serve add water to taste and then enjoy!

Note: You can use honey instead of sugar, and add more sugar or lemons to taste if necessary.



Lemon Drizzle Cake

Add 4oz of sugar to 4oz of butter, cream together until the mixture is lighter.

Add two medium sized eggs, and beat until the mixture is smooth.

Add 4oz of white flour, fold into the mixture, gently!

Add the rind of two lemons and a squeeze of lemon, gently stir in.

Add to a greased cake tin.

Bake at 180 degrees until golden and the top bounces back (I may have left mine in the oven a little too long, but it still tasted amazing!)

Add another big squeeze of the lemon on the top when it is out of the oven.


Not Quite A Gin And Tonic

This is a mixture of two cocktails, it can be changed to taste:

Put a large teaspoon of honey into a glass (unless you have a really sweet-tooth, then add more)

Squeeze half a lemon into the glass.

Stir until the two blend.

Add two shots of gin.

Add crushed ice.

Stir again, and then enjoy…

To make non-alcoholic just add lemonade instead of gin!
